Chocolate Brownie Cookies

I got this recipe from a friend at work.  You could put little red hots for ‘Christmas ornaments’ on these star brownies at Christmas time.



1 cup butter – melted
2 cups sugar
3 eggs
1 tsp vanilla
1 cup flour
3/4 cup cocoa


Preheat oven to 350 degrees. Mix together melted butter and sugar. Stir in eggs and vanilla until blended. Stir in flour and cocoa until blended.  Butter the sides and bottom a cookie sheet and line with parchment paper. Spread the batter evenly across the cookie sheet. Bake for 15 minutes. Cool completely then refrigerate for at least 3 hours. Turn over on counter and pull off parchment paper. Use cookie cutters to cut out different shapes. Dust with powdered sugar or decorate as you please.

Chocolate Crinkles

I got this recipe from my work friend Lark.  She always called me Linda and finally I quit correcting her and just let it go.

  • 1/2 cup vegetable oil
  • 4 squares unsweetened chocolate (melted)
  • 2 cups granulated sugar
  • 4 eggs
  • 2 tsp. vanilla
  • 2 cups flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup powdered sugar

Mix oil, melted chocolate, granulated sugar.  Then add 1 egg at a time to chocolate mixture, mixing well after each egg.  Add vanilla.  In separate bowl, combine flour, baking powder and salt.  Mix dry ingredients well.  Then add flour mixture, a little at a time, to chocolate mixture, mixing after each addition.  Chill several hours to overnight.  Drop spoonfuls into powdered sugar and coat cookie dough.  Spray cookie sheet with Pam.  Bake at 350 degrees for 15 minutes.  Makes 30 cookies.
