Cornbread Muffins




  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup canola oil
  • 1 large egg

Spray muffin pan with cooking spray or grease with butter. Set aside.

Preheat over to 400 degrees F.

In large mixing bowl, whisk together cornmeal, flour, baking powder, baking soda, sugar and salt.  In a separate mixing bowl, whisk together buttermilk, oil and egg.  Add wet ingredients to dry ingredients, and stir together with wooden spoon.  Do not over-mix this.  Scoop batter into prepared muffin pan.

Bake for 15 to 18 minutes or until tops are golden brown and inserted toothpick comes out clean.  Serve with your favorite chili.
