Homespun Applesauce Cake

This recipe is from Cecelia Ludwig, who was born in Germany and originated a popular restaurant, The Homespun, in Leeds, Utah.  Her mother was a cateress for clients including Emperor Wilhelm II.  This is her recipe for Homespun Applesauce Cake:

  • 2 cups cake flour, sifted
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter
  • 1 cup sugar
  • 1 teaspoon cinnamon
  • Grated rind of one lemon
  • 1 egg, well beaten
  • 1/2 cups thick applesauce
  • 1 teaspoon baking soda
  • 1/2 cup seedless raisins
  • 1/2 cup nuts, chopped

Mix flour, baking powder and salt.  Sift and set aside.  In another bowl, cream butter, sugar, cinnamon and lemon rind until soft and smooth.  Add egg and beat until fluffy.  Add applesauce, baking soda, raisins and nuts.  Stir in dry ingredients.  Mix well.  Turn into well greased and floured 8″ square cake pan.  Bake at 350 degrees for one hour.  Yields one 8″ cake.
