This recipe is from Grandmother Elaine Smith.  It is such a yummy dish.  Elaine said there are no longer cans of ‘cream of shrimp soup’ in the stores so she makes a white sauce and adds fresh small shrimp to the sauce.  I don’t know if she uses evaporated canned milk in place of regular milk or not.

  • 1 lb halibut cut in one inch pieces (you can get it at Costco)
  • 2 cans cream of shrimp soup (thinned–with 1/3 c canned milk)
  • Place fish in buttered casserole.  Pour sauce over well buttered fish.  Sprinkle with Parmesan cheese.

Here is a basic roux recipe:

2 T butter, 2 T of flour, 1 cup whole milk

  1. In a small saucepan over medium heat, melt butter. Add flour and stir until the butter and flour are well combined. Pour in milk, stirring constantly as it thickens. Add more milk depending on desired consistency.
