This delicious recipe is from my friend Korinne.
- 5 lbs russet potatoes (skinned, cubed, boiled until cooked through)
- 2 sticks of butter
- 1 8oz. pkg cream cheese
- sour cream if desired
- Fresh minced garlic (I use the bottled kind)
- Fresh chives (or bottled kind)
- Splash of milk or more (depending on how creamy you like them)
- Salt and pepper to taste
You can smash all ingredients together if you like them really smooth and creamy, or use a spoon to stir, in which case they are more chunky.
