Shepherd’s Potatoes

  • 4-5 baking potatoes, peeled and sliced
  • 3-4 T Olive oil, or bacon grease
  • salt and pepper to taste
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese

Directions: Heat olive oil in a large frying pan. Add potatoes, salt and pepper. Cover and cook until potatoes are fork tender(stirring occasionally). When potatoes are fork tender add milk and cook uncovered until milk begins to be absorbed by the potatoes and is beginning to thicken. Sprinkle with cheese and serve.

Chop up some bacon, cook it, remove from pan. Cook potatoes in the pan with the bacon grease and then add the bacon back on top when the potatoes are finished. Sprinkle some cayenne pepper on top if desired. –From TheSistersDish
