Banana Cake with Cream Cheese Frosting

 
Ingredients:
  • 2 1/2 c. flour
  • 1 1/4 tsp. baking powder
  • 1 tsp. salt
  • 1 2/3 c. sugar
  • 1 1/4 tsp. soda
  • 2/3 c. butter, at room temperature
  • 4 mashed bananas, large
  • 2 large eggs
  • 2/3 c. buttermilk or plain yogurt
  • 2/3 c. chopped nuts (optional)
  • 1 tsp. vanilla

Directions: Preheat oven to 350 degrees. Sift together: flour, baking powder, salt, sugar and soda. Then add: butter, and bananas. Beat thoroughly, then add: eggs, buttermilk, chopped nuts and vanilla. Mix until well combined. Pour into a greased & floured 9×13 pan. Bake at 350 degrees for 40 minutes. When cooled, top with Cream Cheese frosting. Recipe below.

Cream Cheese Frosting

Ingredients:

  • 8oz. cream cheese, at room temperature
  • 2 c. powdered sugar
  • 2 tsp. vanilla
  • 1/2 c. butter
