Apple Pecan French Toast

I got this recipe from my friend Julee in Florida.

  • 12 eggs              
  • 1 cup milk
  • 1/4 cup sugar
  • 1/4 teaspoon cinnamon
  • 1 medium apple, peeled and shredded (tart apple is best)
  • 1/2 teaspoon vanilla
  • 1 loaf french bread, cut into 12 1-inch slices
  • 1/2 cup chopped pecans
  • 2 Tablespoons melted butter
  • Syrup

Coat the bottom of a 13×9 glass baking dish with nonstick cooking spray or brush with melted butter.

Combine eggs, milk, sugar, cinnamon, apples and vanilla.  Place bread in a single layer in baking dish.  Pour egg mixture over the bread.  Turn bread over to coat the other side.  Cover with plastic wrap and refrigerate overnight.  Preheat oven to 425 degrees.  Sprinkle pecans over top of bread slices and drizzle with melted butter.  Bake 20-25 minutes or until puffy.  Serve with maple syrup.  Serves 4-6.
