Grandma Smith’s Norwegian Chicken Bake

I got this recipe from Grandma Smith when she served it for dinner one night.  Her family is from Sweden so the title of this recipe kind of makes me laugh because I’d always heard the Swedes and Norwegians didn’t “like” each other.

Cover bottom of baking dish with one inch thinly sliced potatoes.  Place thin layer of sliced onion over potatoes.  Place 4 to 6 chicken breasts or thighs on top of onion.


  • 1 can cream of mushroom soup
  • 1 Tablespoon lemon juice and one cup of milk

Pour this over the chicken and bake at 400 degrees F for one hour or until potatoes are tender.
