Simple Zingy Macaroni Salad

This tastes even better the next day when flavors have merged better.  I think it would taste really good with shrimp as a shrimp salad.

  • 1 (16 oz.) package macaroni
  • 2 red bell peppers, chopped
  • 1 green bell pepper, chopped
  • 1/2 cup chopped green onions
  • 2 stalks celery, chopped
  • 1 tablespoon olive oil
  • 1 cup mayonnaise
  • 1 packet dry Ranch soup mix (or vegetable soup mix)

Bring a large pot of lightly salted water to a boil.  Add pasta and cook for 8 to 10 minutes, or until al dente (noodles are still slightly firm).  Drain and rinse with cold water until no longer hot.  Let water drip out of colander and shake excess water out and let noodles dry.  Transfer noodles to a large bowl.  Stir in olive oil, green pepper, green onion,  and celery.  Mix together mayonnaise and dry soup mix.  Pour over noodles and combine until all noodles are covered.  Refrigerate a few hours before serving.
