Patience

  • 3 cups sugar
  • 3 cups evaporated milk
  • 1/2 cup chopped walnuts

Put 1 cup of the sugar in heavy skillet and place on low heat.  Stir continually till sugar caramelizes and turns light brown.  Add 1 cup of the evaporated milk.  Sugar will harden into a lump; stir and cook till smooth and free from lumps.  Then slowly add 1 more cup sugar; then 1 cup milk; 1 cup sugar; and finally the last cup of milk.  Stir continuously till firm-ball stage is reached.  Add nuts and drop by teaspoon onto buttered cookie sheet.  Makes about 2 pounds of candy.
