I got this recipe from my friend Julee in Florida. This is an oven version, as opposed to the dutch oven version. The picture is from one of your dad’s all-time favorite movies, “Jeremiah Johnson,” with Robert Redford.
- 2 lbs pork sausage (1 hot, 1 mild)
- 1 medium onion
- 3 cups milk
- 1 teaspoon salt
- 1 1/2 lbs shredded cheddar cheese
- 12 eggs beaten
- 1 1/2 teaspoons dry mustard
- 1 32-oz bag Ore-Ida hash browns
Cook sausage and onion over medium heat until done, stirring to crumble. Drain well on paper towels and set aside. In same skillet, brown hash browns over medium heat. Combine sausage, hash browns and remaining ingredients, mixing well. Pour into a well greased 13x9x2 inch baking pan. Refrigerate covered overnight. Bake at 350 degrees for one hour.
