1 Tbsp. oil
1 boneless, skinless chicken breast
1/2 cup BBQ sauce (plus a little to put on the chicken)
1/2 cup marinara sauce
1 pizza crust (we use Rhodes bread & spread it out on a pizza pan)
1-2 cups shredded mozzarella cheese
1/2 red onion, sliced (or to taste)
3/4 c. pineapple, chunked
Fresh cilantro, chopped (to taste)
Green onion, chopped
Parmesan cheese (to taste)
Heat the oil in a skillet over medium heat. Place the chicken breast in the skillet, and top with a little BBQ sauce. Cook 10 minutes, turn, and top with a little more BBQ sauce. Continue cooking 10 minutes, until juices run clear. Cool slightly, and cut into chunks. Preheat oven to 425-degrees.
In a small bowl, mix 1/2 c. BBQ sauce and marinara sauce. Spread evenly over the pizza crust (you may not need to use it ALL, just spread on to taste). Sprinkle with a little mozzarella cheese. Arrange cooked chicken chunks, red onion slices, and pineapple over the top. Sprinkle remaining mozzarella over the top and bake 15 minutes in the preheated oven, or until cheese is melted and bubbly.
Remove from heat, sprinkle with cilantro, green onion, and Parmesan cheese. Let sit a few minutes before slicing. –From Favorite Family Recipes.
