Oatmeal Cake and Coconut Frosting

I got this recipe from Grandma Smith when she made it for your dad’s birthday one year.  It’s delicious!

CAKE ingredients:

  • 1 1/4 cups boiling water
  • 1 cup quick cooking oats
  • 1/2 cup butter or margarine
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 tsp. vanilla
  • 2 eggs
  • 1 1/2 cups flour
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. cinnamon

FROSTING ingredients:

  • 6 tbsp. butter
  • 1/2 cup brown sugar
  • 1/2 cup evaporated milk
  • 1/2 tsp. vanilla
  • 1 cup shredded coconut
  • 1 cup chopped nuts (walnuts or pecans work well)

DIRECTIONS:

CAKE: In large bowl, pour boiling water over oats and let cool. Cream butter and sugar; add eggs and blend well. Add to cooled oat mixture. Sift dry ingredients and add to mixture; mix thoroughly by hand. Divide batter into 2 greased and floured 8 inch round cake pans. Bake at 350 degrees for 30 minutes or until done. FROSTING: In saucepan, melt butter over low heat. Add sugar and milk; stir over heat until sugar is dissolved. Remove from heat and add rest of ingredients. Frost cake when cooled.
