These are really good. I got this very yummy recipe from my friend Julee. I used a barbecued flavored rotisserie chicken for the chicken meat because it was faster to make and it was delicious!
- Chicken breasts
- Barbecue sauce
- Ranch dressing
- Vidalia onion, sliced
- Green pepper, sliced
- 1 Tablespoon honey
- Flour tortillas
- Monterrey Jack cheese, grated
Thaw some chicken breasts, cut them into small pieces, then marinade them in BBQ sauce for about an hour. (Or save some time and use store bought rotisserie barbecue chicken). Cut a sweet vidalia onion into rings and saute them on low heat with some butter and about 1 TBSP of honey until they are very caramelized (About 20-25 minutes). Cook the chicken with a bit of olive oil until done. Chop up some bacon and cook until crispy. Cook some thinly sliced green bell pepper along with the bacon until just softened.
When the chicken and onion and green peppers are ready, crisp two tortilla shells in a buttered pan until crispy. Then squirt Ranch Dressing and Barbecue sauce on each tortilla and mix it together. Top one tortilla with the chicken, green pepper, onion and some grated cheese. Put the other tortilla shell on top of that. Slice in quarters. Serve with sour cream and salsa, etc.
